WHEEZY'S SOUR CREAM CARROT CAKE

1/2 cup veg oil

2 cups sugar

4 eggs

2 cups flour

1 tsp cinnamon

1 tsp baking soda

1 tsp salt

2 cups chopped pecans  (divided into 2 separate cups)

3 cups grated raw carrots

1/2 cup sour cream

 

Combine oil, sugar and eggs

Sift together dry ingredients and set aside

Add 1 cup of pecans, carrots and sour cream to sugar mixture

Add dry ingredients

Pour into greased and floured 9x13 inch pan

Bake at 350 for about one hour

 

Frost with cream cheese icing and top with pecans

CREAM CHEESE ICING

1 lb confectioners sugar

6 oz cream cheese

1 stick margarine (softened)

2 tsp vanilla

1/2 cup sour cream

 

WHIPPED CREAM TOPPING

Whip 2 cups heavy cream until it thickens

Add 1/4 cup granulated sugar

Add 1 tsp vailla extract

Continue beating until very thick
