RECIPE: Mocha Java Shortbread

A perfect shortbread with a hint of coffee and a lot of chocolate flavor without a lot of work. Imagine yourself sitting down with a cup of coffee or tea, a couple of shortbread cookies fresh from the oven, allowing your cares to go away!
Prep time: 70 minutes
Cook time: 15 minutes
Serves: 10
PREPARATION:
- Soften the butter by putting it in the microwave for about 45 seconds, then cream in the flour, coffee granules, powdered sugar and vanilla
- Add chocolate chips
- Knead once or twice, then shape into a roll inside a sheet of waxed paper or parchment paper
- Place in the refrigerator for one hour
- Remove dough from refrigerator and slice into about 1-inch rounds
- Place rounds on a greased cookie sheet; flatten just slightly with your fingers or a fork
- Bake at 350 degrees for 15 minutes
INGRIDENTS:
- 1 1/2 sticks butter
- TIP: Be sure to use real butter for the best results.
- 1 1/4 cups flour
- 3 teaspoons instant coffee granules
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla
- 1/2 cup mini chocolate chips
